Justin Funamura is best known for his chicken and waffles food truck, The Waffle Roost. Recently, he has pivoted to a new concept, Yakitori Harue. He had dabbled in yakitori in the past, even hosting a yakitori event at Levi’s stadium, but he wanted to go all in on his Japanese heritage and fine tune the concept.

He offers a chicken and mushroom yakitori skewer both basted in his signature glaze made from ginger, garlic, and soy sauce. They’re cooked over a flame until lightly charred to provide a hint of smokiness. Aside from skewers, you can also find two forms of fried chicken — a technique that Justin mastered while working The Waffle Roost. There’s panko-crusted chicken served with katsu sauce and extra crispy Korean fried chicken nuggets.

Don’t miss out on their sides like yakimeshi (Japanese fried rice) or sauteed sesame cabbage. We’re most excited to slurp up a bowl of the garlic butter ramen noodles. His favorite item is the yakitori chicken to get a perfect balance between sweet and savory marinade with a little spice. He feels unsure of where the food truck industry is heading, but he’s confident in his new ideas and ability to adapt to the always shifting food scene.
