
Justin Funamura started The Waffle Roost truck nearly 13 years ago. Prior to that, he had years of experience working front of house in restaurants. He decided he wanted to open a restaurant of his own, but when he faced issues securing a loan, he didn’t let that stop him. He decided to open a food truck business based on a dish he had tried several times, yet felt it was never as good as it was supposed to be — chicken and waffles. It was also a smart move because it’s a dish that can be enjoyed at any time of day.

Their Belgian-style waffles are made from scratch and feature flavor combinations such as dark chocolate and almond; caramel and sea salt; and cinnamon sugar. His most popular offerings are his buttermilk fried chicken sandwiches made by stuffing fried chicken between two waffles. The Spicy & I Know It sandwich features crispy melted cheddar and serranos. The Stack sandwich is the perfect breakfast pick as it’s filled with bacon and egg. The ECP is their vegetarian option filled with fried egg, melted cheddar, and serrano. While the chicken and waffles are the stars of the show, don’t sleep on their side dishes. They offer classics like shoestring fries, which we’d argue are the best type of fries, and collard greens. We recommend the aged cheddar mac n cheese which is gooey, rich, and flavorful.
