Nancy Cordero started Tamale Fiesta to bring people together and share her family’s recipes. She won 1st place at the 8th Annual Tamale Festival in Atascadero for her red mole beef filling which features a blend of dried chiles and spices. She also offers a variety of sweet tamales made with corn or pineapple. Aside from the hot-and-ready tamales, she also offers them refrigerated so you can take a batch home and eat them fresh. Tamale Fiesta has been featured on KTLA, NBC, and KCAL.
She learned to make tamales by cooking alongside her grandmother. Her recipes have been passed down from generation to generation. She has fond memories of being a part of the production line with her aunts and uncles. She’s refined her technique of shaping and filling tamales since her childhood.
The Tamale Fiesta offers a large selection of tamales made without lard. They’re filled with vegetables, rajas, pollo verde, puerco verde, corn, pineapple, strawberry, or beef. She takes pride in offering vegetarian and vegan options, which aren’t a typical offering since most tamales are made with lard. They’re made fresh each day to ensure the masa is moist and fluffy. They don’t skimp on the fillings here, they’re filled and nearly overflowing.
She enjoys bringing people together around this edible tradition. Her favorite part of running The Tamale Fiesta is introducing the dish to people who have never tried a tamale before.
