Even as a tenured, strategic event planner, when Carolynn Santos, Global Programs Marketing Manager, was given the reins to throw an annual event for over 250 experts in the innovative technology community, she knew she had to pull out all of the stops. After selecting the quirky and novel Pinball Hall of Fame on the Las Vegas strip as the event location, Carolynn immediately knew who to call next. The OTG team accounted for each detail from pre-planning with a mapped layout of each food vendor within the venue’s parking lot, to on-site production services – lighting, electricity, securing permits and navigating fire codes – to ensure a flawless execution of Carolynn’s strategic vision.

Hosting an event outside of the immediate Bay Area posed a few unique obstacles for the OTG team – primarily, finding trusted (and tasty) mobile food trucks in the Las Vegas area. However, Off the Grid’s streamlined approach to onboarding new vendors, whether local or across state lines, made the search for vendors a breeze. Not to mention, the diverse group of savory and sweet food vendors (Gastro Garage, Slidin’ Thru, Sticky Iggy and The Cookie Bar) were all huge hits among the very hungry attendees.

Each detail was perfected ahead of schedule and the four vendors were ready to service 250 guests upon their arrival. The evening went off without a hitch, and when asked if she would refer our diverse, unique and scalable food selections for an upcoming event, Carolynn stated “Absolutely in a heartbeat, Off the Grid Catering would be my first call.”
